Composite cable/aspect ratio

I bought a gamebridge to record videos with, and to play with it lag free I have my 360 hooked up to both my tv and my laptop (through the gamebridge)

so anyways, because of that I can only play using composite cables. so I plug the red/yellow/white cables into the AV ports on the TV, but the switch on the 360's cables (the TV/HDTV switch), it will only show the game on the TV if its switched to just the TV setting. is there anyway to have it on the HDTV setting and have it show the gameplay? (so I can record in 16:9)

To record to my gamebridge, i have to play 4:3, 480i.
