Emerald Weapon is tough, but do-able with training and strategy... having said that I relied heavily on Knights of the Round, Pheonix and another Materia I can't remember to win...

You get to Disc 2 a bit after Aerith's unfortuneate death... and as for Yuffie... she can be found in virtually any forest I do believe but I found her near Cosmo Canyon... I can't remember too great (which is lame because I only did it a few days ago), she's a random enemy you can face and you'll easily know if its her... beat her and pick the right answers to her statements.
