A jedi starwars game would rock... control the lightsaber with the wiimote and use force powers with the nunchuck. Like force grab with the nunchuck while still being able to deflect stuff with your lightsaber.

Well think about that though you have it backwards. The remote would have to be forece because it has the info red on the end so you can aim at what you want to grab. The nunchuck is motion so it would feel as cool but still works as a light sabre. OR Remote does both and is much simpler.
THe wii-mote is the perfect controller to control a lightsaber. Jedi duels on a videogame with the wii-mote would be awesome.

It's not out of the question that developers could use two Wii controllers without the numchuck at all for a 1P game. Thats how It always used to work with Nintendo Peripherals.
i.e: Zapper and paddle in P1 and P2 ports were both for P1 but had seperate functions.
Think of all the Badass things you can do with a Wii Remote in each hand!!
