I beta'd WoW and many other smaller games and programs before, and I sure as hell don't work for those companies

not always, sometimes you just beta a patch that isn't released yet. but generally it hasn't been released to the public (with the exception of public betas like halo 3)
From what I know
Beta is practically one of the stages of how finished the game is , in the greek alphabet, so the first phase is Alpha, the second is Beta, and the Third is Gamma and so on (It usually just ends at Beta).
So when you beta a game you are playing the second phase of a game (probably around 95% finished)
