Dragonball GT isn't anything great. the baby saga was kinda boring. Until he got to SSj4, Super 17 FTW!

One piece will occupy you though, 300+ eps, and still going strong.
Most importantly, no fillers. 300+ eps with no filler. It's unbelieveable.

as D4rkDrago0n mentioned, cowboy bebop is always a pleasure to watch... best anime soundtrack ever. i'd also highly suggest serial experiments: lain, but only if you want to watch all 13 eps. in one or two viewings. lain is a bit too much of a mindf@*k to watch the episodes separately. witch hunter robin is worth a watch if you've never seen it. flcl is pretty cool too. i also enjoyed read or die the tv series. not sure how many other people did, but it's about paper masters.
if you're looking for full length films, nausicaa is pretty good. and if you're in the mood for an amazing yet heartbreaking film, then grave of the fireflies would be perfect.
BLEACH! Midnight on Cartoon Network (Adult Swim). you just missed it, but it comes again 3. every Sat.
Fullmetal Alchemist is a necessity.
DragonBall GT should never be watched for it is so bad that it will leave a dirty stain on your soul for all eternity.
